I saw this recipe on my sister-in-laws blog and thought it would be great for Thanksgiving morning...not only was it great but it was wonderful! They are the best tasting waffles I have ever tried and to top it off, homemade syrup! Delicious! So for those of you who are dying to try these yummy waffles here's the recipe:
Pumpkin Waffles
Dry:
2 C. Flour
2 TBSP Baking Powder
1 TBSP Cinnamon
1/2 tsp Nutmeg
1 TBSP Sugar
1/4 tsp Salt
Wet:
1 1/2 C. Milk
4 Eggs
1 C. Pumpkin
3/4 C. Melted Butter
1 tsp Vanilla
Combine all ingredients. About 4.5 min in the waffle iron.
Buttermilk Syrup
1/2 C. Butter
1 C. Sugar
1/2 C Buttermilk
Bring to a boil, remove from heat and add:
1 tsp Baking Soda
1 tsp Vanilla
Syrup will fizz, then settle. Serve over hot waffles.

I also got the recipe from Connie's blog. I tried it when Troy, Jo and family was here. We enjoyed it, too!
